I would assume birds could see color, since color seems important to their mating displays.

Since many birds can see into the ultraviolet range, and most also have four cone cells in their eyes (pigeons may have five), that might mean they can experience radically new "Martian colors". Rather than just distinguish more refined hues/shades amidst the usual limited incremental changes between the red-green-blue primary colors and wholly invented purple (where the brain circularly joins blue and red rather than leaving the spectrum a straight line with terminated ends).

There are claims of some humans being tetrachromats, but the online tests for such are compromised, since computer monitors only render what falls out of the ordinary trichromatic mixtures. Maybe the test could establish that a majority of people cannot distinguish more than 32 of its colors, but not that those who can really have four cones. Would be an insane percentage, if that was the case -- even I discerned at least 38 differences.

There appears to be no means birds will not spare just to attract a mate. The widespread use of colors and patterns in plumage towards this end is clear evidence of this. Every conceivable hue of the spectrum is employed, from ultraviolet and vibrant chartreuse to electric pink and dazzling scarlet. Not only do birds have a keen eye for color, but perhaps they have a very refined aesthetic sense for visual beauty as well. The resplendent and meticulously selected for majesty of the male peacock is a testament to this.
