This is quick and easy but it's only good with fresh tomatoes. Mine are almost ripe.
½ cup olive oil
2 cloves pressed garlic
1 tsp salt
1/4 tsp black peppere
1 pinch of red pepper
1 lb thin spaghetti
4 tsp vinegar
1 medium diced red onion
1 jar of capers drained
1 can of sliced black olives drained
1 bunch of chopped basil
3 large fresh chopped tomatoes
1 bunch chopped spinach
Cook spaghetti. Combine olive oil, salt and pepper. Toss spaghetti with oil mixture. Add vinegar, red onion, capers, black olives, and toss. Add basil, tomatoes, spinach, and toss.
