The Science behind Fermentation for Wine and Beer.  I didn't place it in the Science section purely because there are a lot of hobbyist's that like brewing their own or at the very least participate in drinking. (Although Teetotaller's might be classed as something slightly different.)

As for Zyme/Enzyme, not sure but it probably did originate that way.

Alas, Currently not.  I've considered doing so, the problem is I put that thought on a backburner and tend to realise I'm in the wrong season to make anything Confused

I know some good spots for Elderberries, blackberries etc (If I don't get caught "poaching", I guess that's what it would be.)  Although saying that I suppose there is various brewers kits I could pick-up for other beverages like Ale.  It's something I need to look towards in the future.

I would brew beer, but I have very little self control so would probably certainly drink too much of it.
I am already overweight, so don't want any more empty calories.

It's not for me unfortunately.

I used to make some very nice wine from bananas, in gallon flagons.
The more rotten the bananas, the better, so if you went to the market late on a Saturday,
you could pick up bagfulls for next to nothing.
It was better than anything you could buy under £4.
