Peanut butter and...

something other than jelly, or even celery. I found it goes well with raw brocolli.  I use the type of natural peanut butter that has no ingredients other than from peanuts.  Another raw veg that I like peanut butter with is turnip greens.

Hubby used to eat a jar's worth of peanut butter every 3 or 4 days, often just by itself smeared on wheat bread. But over the last year he switched to unsalted peanuts combined with walnuts and raisins as a trail mix. Somewhere he picked-up the notion that walnuts are the best, edible shell-seeds for men's health. The peanuts got relegated to being part of the filler for making the more expensive walnuts last longer. Plus, I guess there's a warning not to eat too many ounces of the latter everyday so as to avoid an excess of selenium, zinc or whatever other minerals / nutrients are involved.

He apparently still deems peanuts to be good in their own right, though. Personally, I wonder sometimes about cancer-inducer aflatoxin B1 from the fungal source, but it's usually beyond the allowable limits in street and mobile vendors' peanuts.

I tend to eat that much peanut butter, too.  There is an area of China where there seems to be a lot of exposure to aflatoxin.  It can form on grains,  vegetables, and peanuts, according to Wikipedia.

Liver cancer, specifically caused by aflatoxin rather than alcohol overindulgence or hepatitis, could be relatively rare in my eastern Midwest US area, while that type of peanut butter, made out of only peanuts and a bit of salt that I forgot to mention, is a very popular item with the customers since the shelf spot for it at the store is usually mostly empty.  I like walnuts a lot yet unfortunately their price is pretty far up in the high range around here also.  Lately, I have discovered that sesame seeds have a pleasant flavor.  I eat a teaspoon or two of them each day now, too.
