Chilled Strawberry Lavender Soup

Ingredients:

1 pint fresh strawberries, hulled and rough chopped
1 shallot, peeled and rough chopped
1 clove garlic, minced
Juice of 1 lemon
3 cups water or vegetable broth
1/2 cup coconut milk
1/2 t dried culinary lavender
2 ounces crumbled goat cheese
Sea salt and fresh ground pepper, to taste

How To Make It:

1. Put all of the ingredients, except for the goat cheese, in a blender. Blend until smooth.

2. Season with salt and pepper and refrigerate for 6-8 hours or overnight.

3. Serve chilled, topped with goat cheese.
