"Zymology 21, a new bar and restaurant with a quirky science theme that includes drinks served in test tubes and lab beakers, opened in the Gaslamp Quarter in downtown San Diego.

The restaurant is the the third concept from the C21 Restaurant Group, known for the award-winning Café 21 restaurants in University Heights and the Gaslamp Quarter. The new restaurant at 750 Fifth Avenue serves brunch, dinner and late night cocktails.

The cocktails are formulated using house fermentation, puree and infusion techniques. “Zymology” is the area of applied science which studies the processes of fermentation.

The interior features an industrial, lab-inspired look. A collection of beakers and test tubes line the bar’s exposed brick walls.
